Amarone Classico DOCG’13 Celestino Gaspari, Zýmē, 750 ml

On the nose, notes of ripe cherry and morello cherry, semi-dried plum, and spices. The palate mirrors the fragrances of the nose and starts off with appealing savory notes, adding fruit preserves. As the wine matures, we receive more delicate impressions of pepper, black liquorice and cocoa powder. Aged 5 years in large Slavonian oak casks and 1 year in bottle.

Background information: Amarone is one of the wines most shaped by the hand of man. It is truly a work of art. The choice of the most appropriate vine- yard, of the best clusters, the moment of harvest, the drying process and choice between natural or technology-assisted, the time on the drying mats, ...and then the pressing, with or without the grape stalk, the grape blend, fermentation with natural or cultured yests, … and then small or large barrels, three years aging or six or maybe nine... All factors that shape the character or create a picture that can be intriguing, or artistic, or banal. Thus, it is talent, dedication, or simply the sum of a man's abilities that bring forth the final result.

Food recommendations:
Roasts and boiled meats, aged cheeses such as Parmigiano Reggiano or Grana Padano. Enjoyed on its own or at the end of a meal with dark chocolate.
