In the mouth, it is complex, full-volumed and generous, compelling and seductive, and leaves long-lingering impressions of fragrant blossoms, fruit, and spice, creating “an utterly perfect sweetness that gives that unique sensation of harmony; it is without a doubt a rare wine, and I am the first to be impressed by it.”

It displays spicy notes of cinnamon, tobacco leaf, whisky, and cherry preserves, lifted by subtle impressions of forest underbrush and moss. The luminous appearance is perfectly-calibrated. Here is a wine possessing the authentic spirit of the past and a lengthy life still to come. A masterpiece.

This Amarone is sourced exclusively from older vineyards, and from rigorously- selected clusters; thus, production is extremely limited. It is produced in very few growing years, since the grapes used must be of far higher quality than those for the standard-vintage Amarone. It is vinified precisely in accord with classic practices. It ferments with vineyard yeasts and at ambient temperatures in cement vats for two months in contact with the skins. It is then drawn off and racked, while some natural sugars still remain in the wine; lengthy ageing will bring the wine to dryness, with 7-8 grams of sugar per litre at the end. Approximately nine years of ageing will bring it to maturity; it ages in various-sized casks, including large ones (33 hl) and 750-litre tonneaux, then bottled in its tenth year of life.

I have concentrated in this bottle the soul, the very quintessence of Amarone. It is an incredible blend of experience, evolution, and expertise, and of complex flavours as well. The result is a wine that I can define-with a bit of presumption perhaps, but with enormous pride--as a masterpiece. Food recommendations:
La Mattonara loves decisive dishes with strong personalities, such as aged cheeses, the finest cuts of meat, and dark chocolate. Or enjoy it by itself as a sipping wine, along with a cigar or pipe.
