Cabernet 60/20/20 IGP’13, Celestino Gaspari, Zýmē, 750 ml

Cabernet 60/20/20 IGP’13, Celestino Gaspari, Zýmē, 750 ml
¥6,955

Rich ruby colour tending to purple, with a fragrant, multi-faceted bouquet boasting red-fleshed fruit and pungent spices. Smooth, velvety mouthfeel, compelling richness, and fine, lengthy progression.
Further bottle-ageing will certainly bring even more suppleness and nobility.
Celestino Gaspari defines the Colli Berici area as “Italy's Bordeaux": a region rich in high-performing soils of volcanic and glacial origins; it enjoys a particular climate, the result of the physical contours of the land and its separation from the body of the Alps. The result is wines of great warmth but with crisp, well-ripened fruit that is quite expressive.

Harvest, vinification, maturation: The grapes were hand-picked into small boxes, then the clusters were placed in drying lofts for some 20-30 days. The must was fermented with wild yeasts in lined cement vats at natural temperatures, for about 40 days. Then the wine matured in new oak barriques for a minimum of 24 months.

Background: The idea for this wine goes back to 2006, when I discovered an old vineyard in the Colli Berici area, which had been planted in 1964. The old vines were scheduled to be torn up, but I requested that they be restored instead, with the result that I found in my hands precious massal clonal material. This led to the idea of creating a new wine, one that would clearly showcase the unique characteristics of those old grape varieties.
I would define this area as “Italy's Bordeaux,” since it has been twenty years now that I have been producing wines from grapes sourced from all of the hillslopes in the Colli Berici. This is a region rich in high-performing soils of volcanic and glacial origins; it enjoys a particular climate, the result of the physical contours of the land and its separation from the body of the Alps. The result is wines of great warmth but with crisp, well-ripened fruit that is quite expressive.
