This Amarone is sourced exclusively from older vineyards, and from rigorously- selected clusters; thus, production is extremely limited. It is produced in very few growing years, since the grapes used must be of far higher quality than those for the standard-vintage Amarone. It is vinified precisely in accord with classic practices. It ferments with vineyard yeasts and at ambient temperatures in cement vats for two months in contact with the skins. It is then drawn off and racked, while some natural sugars still remain in the wine; lengthy ageing will bring the wine to dryness, with 7-8 grams of sugar per litre at the end. Approximately nine years of ageing will bring it to maturity; it ages in various-sized casks, including large ones (33 hl) and 750-litre tonneaux, then bottled in its tenth year of life.
