W. S. Forster, Profile
A native of Austria, W. S. Forster's exposure to wine started at age 9 when he began helping out in the family's village restaurant. He took considerable pride in his responsibilities as he continued working in the restaurant through his school years. In his early twenties, after graduation and military service, Mr. Forster moved to New Zealand where he immediately found employment assisting to produce two fine vintages with pioneering winemakers in the Nelson / Motueka area.
In the mid-eighties, he switched from the production side to the wine trade as he relocated to Japan and began to work as an agent, introducing Italian wineries to importers in Japan and the Far East. Soon afterwards he became the Osaka branch manager and the buyer of a local importer, an experience which allowed Mr. Forster to travel the world extensively to find the finest wines and wineries and, as the years went by, his repertoire has expanded considerably.
Recently, W. S. Forster established his own company, Estate Wines. The Company specializes in fine wines, servicing high end restaurants, hotels, and upscale liquor shops, as well as connoisseurs in the community. Mr. Forster has hosted seminars on wine related topics all over Japan.

I would say 80% of the time wine is consumed together with food. Hence it is only natural that we offer you a selection of wines that make good companions with meals. Not all wines that happen to be 'in vogue' or taste pleasant without food actually qualify as good food matches. The main points to remember here are:
* stay low on the alcohol (11,5% - 13%)
* less oak is better
* acidity is required to produce saliva and clean the palate (this is true for reds and whites)
* a pretty label does not guarantee a delicious wine
As our eating habits are more and more dictated by concerns over health, our diet is becoming lighter: fewer calories, less red meat and fat, more fish, more vegetables, lighter sauces. I believe that we find charming food-matches as well as good bargains in varietals like Chenin Blanc, Gruener Veltliner, Riesling, Pinot Grigio, Barbera, Montepulciano, Zweigelt, Teroldego, Pinot Noir, Enantio and Sangiovese.
